Instructions:

Heat coconut oil in a large skillet or wok over medium-high heat. Add ground pork and cook until browned, breaking it up with a spoon as it cooks. Add coleslaw mix, bell pepper, and onion to the pan. Cook for 3–4 minutes, or until vegetables are softened slightly. Stir in garlic, soy sauce, rice vinegar, sesame oil, ginger, and black pepper. Cook for an additional minute, allowing the flavors to meld. Push the mixture to the sides of the pan, creating a well in the center. Pour in the beaten eggs and scramble them until cooked through. Gently fold the scrambled eggs back into the vegetable and meat mixture.

Serve immediately in bowls, garnished with chopped scallions and sesame seeds. Drizzle with sriracha for an extra kick, if desired.
